  • 600g Potatoes

  • 2 tbsp sunflower oil

  • 2 medium onions, halved and sliced

  • 2 garlic cloves, finely sliced

  • 2 tsp ground coriander

  • 2 tsp ground cumin

  • 1/2 tsp turmeric

  • 1/2 tsp ground ginger

  • 1/2 tsp hot chilli powder

  • 1 tbsp tomato puree

  • 1-litre chicken stock

  • 2 bay leaves

  • 500g cooked turkey (breast or leg meat cut into chunky pieces)

  • 4 tomatoes, quartered

  • 200g young spinach leaves

  • salt/pepper to taste
